Ingredients

  • 8 oz. potatoes
  • 3/4 cup frozen green peas
  • 2 Tbsp. corn oil
  • 1 onion

  • 1/2 tsp. Garam Masala
  • 1/2 tsp. salt
  • 2 tsp. lemon juice
  • 1 cup all-purpose flour
  • 2 Tbsp. butter
  • 2 Tbsp. warm milk
  • vegetable oil for deep frying
  • lime twists (optional)
  • fresh celery leaves (optional)

Instructions

  1. In a saucepan, boil potatoes in salted water for 15 to 20 minutes or until tender.
  2. Drain well, return to saucepan and shake over low heat a few moments or until dry.
  3. Mash the potatoes well.
  4. Cook peas in boiling salted water for 4 minutes.
  5. Drain well.
  6. Prepare the filling by combining mashed potatoes, cooked peas, onion, cumin seed, grated ginger, turmeric, Garam Masala, salt, and lemon juice.
  7. Roll out the all-purpose flour and cut into small circles or triangles to form the samosa wrappers.
  8. Fill each wrapper with the vegetable mixture, fold, and seal the edges with a mixture of flour and water or butter.
  9. Heat vegetable oil for deep frying.
  10. Deep fry the samosas until golden brown and crispy.
  11. Serve hot with Mango Chutney, garnished with lime twists and fresh celery leaves if desired.
