Ingredients

  • 1 lb. smoked beef sausage, sliced
  • 4 (15 oz.) cans butter beans or large lima beans
  • 2 (16 oz.) cans stewed tomatoes
  • 2 onions, chopped

Instructions

  1. In a large pot, brown the sliced sausage and chopped onions.
  2. Add the butter beans, stewed tomatoes, and all their juices to the pot.
  3. Cover and cook on medium to low heat until flavors meld, about 20 minutes.
  4. Alternatively, start in the morning and cook slowly in a crock-pot all day.
  5. Serve hot, yielding 4 to 6 servings.
