Ingredients

  • 1 cup cooked chicken, cut up into pieces
  • 1 cup cooked rice
  • 1 can cream of chicken soup
  • 1 tablespoon diced onion
  • 3/4 cup celery
  • 1/4 cup sliced almonds
  • 1/2 cup mayonnaise
  • 2 to 3 hard-boiled eggs, cut up
  • 1 teaspoon lemon juice
  • dash of paprika
  • potato chips, crushed

Instructions

  1. Boil the chicken with seasonings, using celery tops and parsley if available. Strain the broth and use it to prepare the cooked rice.
  2. Mix the cooked chicken, cooked rice, cream of chicken soup, diced onion, celery, sliced almonds, mayonnaise, hard-boiled eggs, lemon juice, and a dash of paprika.
  3. Place the mixture in a buttered casserole or pan.
  4. Cover the entire top with crushed potato chips.
  5. Sprinkle with paprika.
  6. Bake for 30 minutes at 375°F.
