Deviled Crab Ramekins

Ingredients

  • 10 oz. crab meat
  • 2 hard-boiled eggs
  • 3 Tbsp. margarine
  • 2 eggs
  • 1/4 tsp. salt
  • 1/8 tsp. mustard
  • 2 Tbsp. vinegar
  • dash cayenne pepper

Instructions

  1. Drain the crab meat and remove any cartilage.
  2. Hard-boil the eggs, then peel and chop them.
  3. In a mixing bowl, combine the crab meat, chopped eggs, melted margarine, salt, mustard, vinegar, and cayenne pepper.
  4. Separate the egg whites and yolks; fold in the yolks into the crab mixture.
  5. Fill ramekins with the crab mixture.
  6. Bake or broil until heated through and slightly browned on top.
  7. Serve hot or chilled as an appetizer.
