Deviled Eggs Divan

Ingredients

  • 8 hard-boiled eggs
  • 1/2 c. mayonnaise
  • 1 tsp. prepared mustard
  • 1/4 tsp. salt
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1/8 tsp. paprika
  • 1/16 tsp. nutmeg
  • 1 c. milk
  • 3/4 c. shredded Swiss cheese

Instructions

  1. Halve eggs lengthwise; remove yolks.
  2. Mash yolks; stir in next 3 ingredients.
  3. Spoon into egg white halves.
  4. In 2-quart saucepan over medium heat, melt butter.
  5. Stir in flour and next 3 ingredients until smooth.
  6. Stir in milk.
  7. Cook, stirring constantly, until mixture boils.
  8. Stir in cheese until melted. Remove from heat.
  9. Spread half of sauce in bottom of 13 x 9 x 2-inch baking dish.
  10. Arrange cooked asparagus alternately with deviled egg halves in diagonal rows in dish.
  11. Spoon remaining sauce over asparagus.
  12. Bake in 400° oven 10 minutes.
  13. Makes 8 servings.
