- Cut eggs in half and remove yolks.
- Mash yolks and 1 egg white with a fork.
- Stir in mayonnaise, mustard, chopped onion, and chopped parsley.
- Chop the remaining 3 egg whites.
- Place chopped egg whites on a serving plate.
- Spread the egg yolk mixture on top of the chopped egg whites.
- Cover and refrigerate for 2 hours before serving.
