Ingredients

  • 4 hard-cooked eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon chopped onion
  • 1 teaspoon chopped parsley
  • 1 package wheat crackers

Instructions

  1. Cut eggs in half and remove yolks.
  2. Mash yolks and 1 egg white with a fork.
  3. Stir in mayonnaise, mustard, chopped onion, and chopped parsley.
  4. Chop the remaining 3 egg whites.
  5. Place chopped egg whites on a serving plate.
  6. Spread the egg yolk mixture on top of the chopped egg whites.
  7. Cover and refrigerate for 2 hours before serving.
