Ingredients

  • 4 eggs
  • cold water
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon-style mustard
  • a dash of white pepper
  • 1 tablespoon drained capers, rinsed
  • 1/4 cup finely chopped baked ham or prosciutto
  • slivered leaf lettuce for garnish

Instructions

  1. Place eggs in a 2-quart saucepan.
  2. Cover eggs with cold water.
  3. Bring water to a boil.
  4. Reduce heat and simmer eggs for 12 minutes.
  5. Rinse eggs well with cold water.
  6. Fill the pan with more cold water and let eggs stand for about 30 minutes until cooled.
  7. Crack and carefully remove the shells from the eggs.
  8. Cut the eggs in halves lengthwise.
  9. Scoop the yolks into a bowl.
  10. Mash the yolks, removing and reserving about 2 teaspoons for garnish.
  11. Mix the mashed yolks smoothly with mayonnaise, mustard, and white pepper.
  12. Fold in capers and chopped ham, reserving about 2 teaspoons of ham for garnish.
  13. Mount the egg yolk mixture into the egg whites.
  14. Sprinkle with the reserved egg yolk and ham for garnish.
