Ingredients

  • 1/2 cup nonfat milk
  • 1/4 cup prune puree
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 6 tablespoons unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups packed light brown sugar
  • 1 1/2 cups hot water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Coat an 8-inch square baking pan with vegetable cooking spray and set aside.
  3. In a mixer bowl, beat the nonfat milk and prune puree until well blended.
  4. Add the all-purpose flour, granulated sugar, 2 tablespoons of cocoa powder, baking powder, and salt.
  5. Beat just until thoroughly combined.
  6. Spread the batter evenly into the prepared pan.
  7. In a small bowl, mix the brown sugar and remaining 1/4 cup of cocoa powder.
  8. Sprinkle the cocoa-sugar mixture evenly over the batter in the pan.
  9. Bake in the center of the oven for about 45 minutes, until the cake is springy to the touch.
  10. Allow to cool for 15 minutes on a rack before serving.
