Different Chicken And Dressing

Ingredients

  • 6 chicken drumsticks
  • 6 chicken thighs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 Tbsp. butter or margarine
  • 1/2 lb. lean pork sausage
  • 3/4 c. chopped onion
  • 3/4 c. chopped celery
  • 3/4 c. chopped green pepper
  • 1 c. uncooked rice
  • 1 (12 oz.) can whole kernel corn

Instructions

  1. Sprinkle chicken with salt and pepper.
  2. In a large ovenproof fry pan, place butter and melt over medium heat.
  3. Add chicken pieces, 6 at a time, and brown on both sides.
  4. Remove browned chicken from pan and pour off drippings.
  5. In same pan, place sausage, onion, celery and green pepper.
  6. Cook, stirring often, about 5 minutes or until sausage is crumbly and vegetables are tender.
  7. Pour off drippings.
  8. To sausage mixture in pan, add rice, corn and chicken broth.
  9. Stir well and bring to a boil.
  10. Remove from heat and arrange chicken on top of rice mixture.
  11. Cover and bake in a 350° oven for 30 to 45 minutes or until chicken is done.
