Dijon Caesar Salad
Ingredients
- For the dressing
- 2 garlic cloves ⓘ
- 3/4 teaspoon salt ⓘ
- 1 1/4 teaspoons pepper ⓘ
- 10 canned anchovy fillets, drained ⓘ
- 2 large egg yolks ⓘ
- 3 tablespoons lemon juice ⓘ
- 2 tablespoons balsamic vinegar
- 1 tablespoon country Dijon mustard ⓘ
- 1 teaspoon Worcestershire sauce ⓘ
- 1/2 cup olive oil ⓘ
- For the salad ⓘ
- 1 large head romaine lettuce ⓘ
- 2/3 cup parmesan cheese ⓘ
- 6 ounces caesar-flavor croutons ⓘ
Instructions
- Wash lettuce and tear into bite sized pieces. Place in large salad bowl.
- Grate Parmesan with box grater and add to salad bowl.
- Add croutons to salad bowl.
- Combine all dressing ingredients except olive oil in blender and blend until smooth.
- Slowly add oil, blending constantly.
- Add dressing to salad in bowl and toss to combine.
