  3. Let stand for 3 to 4 hours, then drain thoroughly.
  4. Combine white vinegar, dry mustard, and dill seed in a pan; heat until boiling.
  5. Add the drained vegetables to the boiling mixture; bring to a boil again.
  6. Pack the hot relish into hot canning jars.
  7. Optionally, add one head of dill to each jar before adding the vegetables.
  8. Process the jars in a water bath for 10 minutes.
