Ingredients

  • 2 tsp. flour
  • 1/4 tsp. dried dill
  • 1/8 tsp. black pepper
  • 4 oz. egg substitute
  • 2 Tbsp. chopped pimiento
  • 1 c. canned salmon
  • 2 Tbsp. nonfat cottage cheese
  • 24 wonton wrappers
  • chopped fresh dill
  • 1 Tbsp. fat free margarine, melted

Instructions

  1. Place flour, dried dill, black pepper, and egg substitute in a medium bowl and beat with an electric mixer until thoroughly mixed.
  2. In another medium bowl, mix together chopped pimiento, canned salmon, and cottage cheese to make the filling.
  3. Press wonton wrappers into mini muffin tins sprayed with nonfat spray and divide the filling among the wrappers.
  4. Sprinkle chopped fresh dill on top of each tart.
  5. Brush the edges of the wrappers with melted fat-free margarine and bake at 350°F for 20 minutes or until edges are lightly browned.
