Ingredients

  • 1 c. uncooked elbow macaroni
  • 1 c. cubed no-fat cheese
  • 1/2 c. celery, chopped
  • 1/2 c. chopped bell pepper
  • 3 Tbsp. chopped and drained pimento
  • 1/2 c. no-fat mayonnaise
  • 1 Tbsp. cider vinegar
  • 1/2 tsp. dried dill weed
  • salt to taste

Instructions

  1. Cook the macaroni according to the package instructions.
  2. Drain well and let it cool.
  3. Combine the chopped celery, bell pepper, and pimento in a large bowl.
  4. In a separate small bowl, blend together the no-fat mayonnaise, cider vinegar, dried dill weed, and salt to taste.
  5. Add the cooled macaroni and cubed no-fat cheese to the vegetable mixture.
  6. Toss lightly to combine with the dressing.
  7. Cover and chill well before serving.
