A hearty, comforting casserole combining tender chicken, peas, carrots, and mushrooms topped with crispy potato chips, ideal for family dinners or casual gatherings.

Ingredients

  • 10 oz. frozen peas and carrots
  • 8 oz. can small whole onions, drained
  • 4 oz. can mushroom stems and pieces, undrained
  • 2 cups cooked chicken or turkey, cut-up
  • 10 3/4 oz. can condensed cream of chicken soup
  • 1 cup crushed potato chips

Instructions

  1. Rinse frozen peas and carrots under cold water to separate; drain.
  2. Mix peas and carrots, drained small onions, mushroom stems and pieces, cooked chicken or turkey, and condensed cream of chicken soup in an ungreased 2-quart casserole dish.
  3. Sprinkle crushed potato chips evenly over the top.
  4. Bake in a 350°F oven until hot and bubbly, about 35 to 40 minutes.
