Mexican Rice Dinner

A flavorful Mexican rice casserole with seasoned ground meat, melted cheese, crispy bacon, and spicy jalapenos, perfect for family dinners and gatherings craving bold tastes.

Ingredients

  • 1 lb ground beef or turkey
  • 8 oz shredded cheese (Cheddar or Jack, divided)
  • 4 slices bacon
  • 1 small onion
  • 1 small bell pepper
  • chopped jalapenos
  • 6 cups cooked rice

Instructions

  1. Cook onion and bell pepper in a small amount of oil until tender.
  2. Add ground beef or turkey and brown thoroughly.
  3. Drain off excess fat from the meat mixture.
  4. Mix together the cooked meat mixture, cooked rice, half the cheese, and jalapenos to taste.
  5. Transfer the mixture into a large casserole dish.
  6. Top with crumbled bacon and remaining cheese.
  7. Bake at 350°F until cheese melts and the dish is heated through, uncovered.
