Ingredients

  • 2 cups coarsely chopped apples
  • 2 cups cranberries
  • 2 cups sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 or 2 tablespoons brandy or bourbon
  • 2 cups flour
  • 2 teaspoons baking soda
  • 4 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup chopped black walnuts

Instructions

  1. Combine apples, cranberries, and sugar and let stand.
  2. Beat eggs slightly.
  3. Beat in oil and brandy or bourbon.
  4. Mix flour, baking soda, cinnamon, and salt.
  5. Stir flour mixture into the liquid alternately with the apple and cranberry mixture.
  6. Stir in black walnuts.
  7. Pour batter into a greased and floured tube or Bundt pan.
  8. Bake at 350°F (175°C) for about 1 hour.
  9. Let the cake stand until cool.
  10. Turn out on a rack to complete cooling.
