Doris' Lasagna

Ingredients

  • 12 oz. lasagna noodles
  • 2 lb. ground beef
  • 2 medium onions, chopped
  • 4 or 5 cloves garlic, crushed
  • 3 cans whole tomatoes
  • 1 can tomato paste (small size)
  • 1 can tomato sauce
  • 3 Tbsp. dried oregano leaves
  • 3 Tbsp. dried basil leaves
  • 1 small bay leaf
  • 1/3 tsp. crushed red pepper
  • salt and pepper to taste
  • 12 oz. Mozzarella cheese
  • 3/4 c. Parmesan cheese, freshly grated

Instructions

  1. Brown beef and onions; add rest of ingredients and simmer for at least 4 hours.
  2. Cook noodles according to package directions, adding 2 tablespoons olive oil to the water.
  3. To assemble, put a little sauce in the bottom of the baking dish; lay noodles on top and top with more sauce, Mozzarella and a sprinkling of Parmesan. Continue layering, ending with Parmesan cheese.
  4. Bake in a 350° oven for 1 hour or until cheese is lightly browned and bubbly.
