Ingredients

  • 1 cup pecan pieces
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 tablespoon butter or margarine
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions

  1. Line a 15 x 10 x 1-inch jellyroll pan with aluminum foil, butter the foil, and set aside.
  2. Combine pecan pieces, sugar, light corn syrup, and salt in a heavy 2-quart saucepan and cook over low heat, stirring gently, until sugar dissolves.
  3. Cover and cook over medium heat for 2 to 3 minutes to wash down sugar crystals from the sides of the pan.
  4. Uncover and cook to the hard crack stage (300°F).
  5. Stir in butter, vanilla extract, and baking soda.
  6. Pour the mixture into the prepared pan, spreading it thinly.
  7. Let it cool completely.
  8. Break into pieces.
