A vibrant, creamy salad combining lime Jell-O, pineapple, marshmallows, cottage cheese, and whipped cream, perfect for parties or refreshing summer gatherings.

Ingredients

  • 2 boxes lime Jell-O
  • 2 cups pineapple juice
  • 18 marshmallows
  • 1/2 pint whipping cream
  • 1 1/2 to 2 cups crushed pineapple
  • 1 pint cottage cheese

Instructions

  1. Melt the lime Jell-O in 1 cup boiling water.
  2. Add 1 cup pineapple juice and mix well.
  3. Put the mixture on low heat and add marshmallows, stirring until dissolved.
  4. Let the mixture cool until it begins to thicken.
  5. Whip the cooled mixture until smooth.
  6. Pour the mixture into a serving bowl.
  7. Add crushed pineapple and cottage cheese to the mixture.
  8. Fold in whipped cream last before serving.
