Ingredients

  • 1 1/3 cups yellow cornmeal
  • 1/3 cup whole wheat flour
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2/3 cup cooked brown rice
  • 1 cup skim milk
  • 3/4 cup water

Instructions

  1. Combine cornmeal, whole wheat flour, all-purpose flour, and salt in a bowl.
  2. Add cooked brown rice, skim milk, and water to the dry ingredients.
  3. Stir to mix thoroughly; cover the bowl and set aside for at least an hour.
  4. Spray a griddle with nonstick spray and heat it.
  5. Pour about 1/4 cup of batter onto the hot griddle to form a flatbread.
  6. Cook until the underside is brown and batter has holes; then turn and cook the other side.
  7. If necessary, turn again to dry out the first side.
  8. Serve warm or cool.
