- Combine cornmeal, whole wheat flour, all-purpose flour, and salt in a bowl.
- Add cooked brown rice, skim milk, and water to the dry ingredients.
- Stir to mix thoroughly; cover the bowl and set aside for at least an hour.
- Spray a griddle with nonstick spray and heat it.
- Pour about 1/4 cup of batter onto the hot griddle to form a flatbread.
- Cook until the underside is brown and batter has holes; then turn and cook the other side.
- If necessary, turn again to dry out the first side.
- Serve warm or cool.
