Ingredients

  • 2 Tbsp. oil
  • 1 Tbsp. cider vinegar
  • 1 1/4 tsp. salt
  • 1/4 tsp. powdered mustard
  • 1/2 lb. green beans, cut into 2-inch lengths
  • 1/2 lb. mushrooms, halved
  • 2 medium zucchini, sliced
  • 2 medium tomatoes, cut in wedges
  • 2 Tbsp. Worcestershire
  • 1 1/2 tsp. sugar
  • 1/2 tsp. oregano

Instructions

  1. In a large skillet, combine oil, cider vinegar, salt, powdered mustard, sugar, and oregano.
  2. Bring to a boil; reduce heat.
  3. Add green beans, cover, and simmer for 5 minutes.
  4. Add mushrooms and zucchini, cover, and simmer for 3 minutes.
  5. Add tomatoes, cover, and simmer for 1 minute.
  6. Serve hot.
