Ingredients

  • 1 egg
  • 1 tsp pepper
  • 1 cup Kellogg's cereal
  • 1 cup all-purpose flour
  • 1 broiler-fryer chicken
  • 1/4 cup margarine
  • 1/2 cup milk
  • 1 tsp salt

Instructions

  1. Measure cereal into a shallow dish or pan.
  2. Set aside.
  3. In a small mixing bowl, beat egg and milk slightly.
  4. Add flour, salt, and pepper.
  5. Mix until smooth.
  6. Dip chicken in batter.
  7. Coat in crumbs.
  8. Place in a single layer, skin side up, in a foil-lined shallow baking pan.
  9. Drizzle with margarine.
  10. Bake in a preheated 350° oven about 1 hour or until chicken is tender and juices run clear. Do not cover pan or turn chicken while baking.
