Ingredients

  • 1/2 cube margarine
  • 1/2 c. diced celery
  • 1/2 c. flour
  • 2 1/2 pt. chicken stock
  • 2 Tbsp. grated Parmesan cheese
  • 1/4 tsp. Accent
  • 1/2 c. diced carrots
  • 1/2 c. diced onions
  • 1/2 tsp. dry mustard
  • 6 oz. grated sharp Cheddar cheese
  • 1 can beer
  • salt and pepper to taste

Instructions

  1. Saute vegetables in margarine until tender, but not browned.
  2. Blend in flour, dry mustard, and chicken stock.
  3. Cook for at least 5 minutes.
  4. Blend in Cheddar cheese, Parmesan cheese, and beer.
  5. Let simmer for at least 10 minutes.
  6. Season and serve with French bread and tossed salad.
