Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 (1/4 oz.) package active dry yeast
  • 1 cup very warm water
  • 2 tablespoons shortening
  • 1 egg

Instructions

  1. Mix the flour, sugar, salt, and yeast in a large bowl.
  2. Add the warm water, shortening, and egg; beat until smooth.
  3. Stir in the remaining flour until the batter is smooth.
  4. Scrape batter from the side of the bowl.
  5. Cover and let the batter rise in a warm place until doubled in size (about 30 minutes).
  6. Stir down the batter and beat 25 strokes.
  7. Spoon the batter into 12 greased muffin cups.
  8. Let rise for 20 to 30 minutes.
  9. Bake at 400°F (200°C) for 15 to 20 minutes.
