Ingredients

  • 12 doves
  • 2 tsp. salt
  • 1/2 tsp. ground pepper
  • 1 tsp. paprika
  • 1/2 cup melted butter
  • 2 cloves garlic
  • 1 cup chicken bouillon
  • 1 1/2 cups Burgundy wine
  • 1 can drained canned mushrooms
  • 1 cup orange juice

Instructions

  1. Wash the doves in cold water; drain well.
  2. Pat dry and split down the middle.
  3. Mix together flour, salt, pepper, paprika, and basil.
  4. Dredge the doves in the flour mixture.
  5. Put melted butter and garlic in a heavy Dutch oven or skillet.
  6. Brown the doves over medium-high heat.
  7. Pour chicken bouillon and Burgundy wine over the doves, then cover.
  8. Simmer, stirring frequently, for about an hour.
  9. Add canned mushrooms and orange juice, then simmer 6 minutes longer.
  10. Thicken the pan juice with a little flour.
  11. Serve hot.
