Ingredients

  • 1 lb. dried pinto beans
  • 1 Tbsp. salt
  • 1 Tbsp. chili powder
  • 1/4 tsp. red pepper
  • 1/4 tsp. pepper
  • 2 cloves garlic, minced
  • 1 large ham hock
  • sliced green onions

Instructions

  1. Sort, wash, and place the dried pinto beans in a Dutch oven.
  2. Cover the beans with 4 inches of water.
  3. Add salt, chili powder, red pepper, pepper, garlic, and ham hock to the pot.
  4. Bring to a boil, then reduce heat and simmer for 8 hours, adding water as needed.
  5. Remove the meat from the bone, then return the meat to the beans.
  6. Top with sliced green onions before serving.
