Dried Mango Chutney
Ingredients
- 8 ounces dried mango, coarsely chopped ⓘ
- 6 ounces golden raisins ⓘ
- 1 cup red onion, diced ⓘ
- 1 1/2 cups black tea, very strong (use 2 tea bags) ⓘ
- 3/4 teaspoon red pepper flakes ⓘ
- 1/2 cup fresh ginger, grated ⓘ
- 1/2 cup red wine vinegar ⓘ
- 1/2 cup corn syrup (light or dark) ⓘ
- 2 garlic cloves, minced ⓘ
- salt, to taste ⓘ
- 1 teaspoon mustard powder, ground ⓘ
- 1 teaspoon ground allspice ⓘ
Instructions
- Place all ingredients in a medium saucepan. Bring to a boil, reduce heat to low, and simmer until thick, about 30-35 minutes, stirring often to keep from scorching. Let cool, and store in an airtight container.
