Ingredients

  • 3 cups ready-to-use beef broth
  • 1 (12 oz.) package Irish pork sausage or 1 (8 oz.) package precooked breakfast links, cut in half
  • 1 (8 oz.) package thickly sliced bacon, cut into 1-inch pieces
  • 2 large onions, sliced
  • 3 pounds red potatoes, sliced into 1/2-inch thick pieces
  • 1/2 cup loosely packed parsley leaves
  • 3 carrots, sliced

Instructions

  1. In a saucepan, combine broth, sausage, bacon, and 1 cup water.
  2. Bring to a boil and cook for 5 minutes.
  3. Remove sausage and bacon with a slotted spoon.
  4. Reserve the broth for later use.
