Ingredients

  • 2 eggs
  • 1 c. brown sugar
  • 1 c. apricot preserves
  • 1/2 c. butter
  • 1/2 Tbsp. vanilla
  • 1 3/4 c. flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 2 ripe bananas
  • 1/2 c. pecans

Instructions

  1. Mix eggs, sugar, apricot preserves, butter, vanilla and bananas until smooth, then add dry ingredients.
  2. Mix and add the nuts, if you like.
  3. Bake at 350° for 35 to 45 minutes in a 13 x 9-inch pan. Top with confectioners sugar, Cool Whip or orange, apricot preserves.
