Ingredients

  • 2 lb. yellow or zucchini squash
  • 2 eggs
  • 1 small onion, minced
  • 1/4 green pepper, chopped
  • 1 c. mayonnaise
  • 1 c. Parmesan cheese
  • prepared stuffing
  • salt

Instructions

  1. Slice the squash and cook until tender; drain well.
  2. Beat the eggs thoroughly in a bowl.
  3. Add minced onion, chopped green pepper, mayonnaise, Parmesan cheese, salt, and pepper to the beaten eggs; mix well.
  4. Combine the cooked squash with the egg mixture.
  5. Transfer the mixture to a baking dish.
  6. Top the casserole with prepared stuffing mix.
  7. Bake in a 350°F oven for 30 minutes or until hot and bubbly.
