Ingredients

  • 1 can chick peas
  • 1 can kidney beans
  • 1 can green beans
  • 1 can yellow beans
  • 1/4 cup oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup plus 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • sliced green pepper to taste
  • sliced onion to taste

Instructions

  1. Drain the cans of chickpeas, kidney beans, green beans, and yellow beans of their juices.
  2. Place the drained beans in a large bowl and mix.
  3. Slice green pepper and onion thinly.
  4. Add the sliced green pepper and onion to the bean mixture.
  5. In a small pot, combine oil, apple cider vinegar, sugar, salt, and pepper.
  6. Heat the mixture over low heat until the sugar melts, then remove from heat.
  7. Allow the dressing to cool completely.
  8. Pour the cooled dressing over the bean mixture.
  9. Mix thoroughly to coat all ingredients evenly.
  10. Chill in the refrigerator for approximately 15 to 20 minutes before serving.
