- Finely chop the small sweet pickle.
- Put the small tomatoes into boiling water for 30 to 45 seconds, then peel and cut into thick slices.
- Mix the chopped pickle, cooked chicken, parsley, oil, capers, and mayonnaise to make the chicken mixture.
- Toast the slices of bread.
- Layer the tomato slices on the toasted bread, then spoon on the chicken mixture.
- Slice the cucumber very thinly and arrange on top of the chicken mixture.
- Cover with a slice of Gouda cheese and place under a broiler until the cheese melts.
