Dutch Toasts combine toasted bread with tomato, chicken, and cheese, offering a savory, creamy flavor profile perfect for a quick lunch or brunch delight.

Ingredients

  • 1 small sweet pickle
  • 2 small tomatoes
  • 1 cup chopped cooked chicken
  • 1 tablespoon chopped parsley
  • 1 tablespoon oil
  • 2 teaspoons capers
  • 1/2 cup mayonnaise
  • 4 slices bread
  • 1/2 cucumber
  • 4 slices Gouda cheese

Instructions

  1. Finely chop the small sweet pickle.
  2. Put the small tomatoes into boiling water for 30 to 45 seconds, then peel and cut into thick slices.
  3. Mix the chopped pickle, cooked chicken, parsley, oil, capers, and mayonnaise to make the chicken mixture.
  4. Toast the slices of bread.
  5. Layer the tomato slices on the toasted bread, then spoon on the chicken mixture.
  6. Slice the cucumber very thinly and arrange on top of the chicken mixture.
  7. Cover with a slice of Gouda cheese and place under a broiler until the cheese melts.
