Ingredients

  • 8 medium to large potatoes
  • 1 bay leaf
  • 1 stick butter or margarine
  • 1 can cream of chicken soup
  • 1 1/2 cups sour cream
  • 1 1/2 cups grated Cheddar cheese
  • 1/4 cup chopped onion
  • 1/2 to 1 cup crushed cornflakes

Instructions

  1. Cook potatoes in jacket with bay leaf until tender, then cool completely.
  2. Peel and grate the potatoes.
  3. Melt butter and add to can of cream of chicken soup; mix until smooth.
  4. Add sour cream, 1 cup grated cheese, chopped onion, salt, and pepper; mix well.
  5. Transfer the mixture to a buttered 9 x 13-inch pan.
  6. Bake at 350°F (175°C) for 30 minutes.
  7. During the last 15 minutes of baking, top with 1/2 cup crushed cornflakes and 1/2 cup grated cheese.
