Earline'S Mexican Corn Bread

Ingredients

  • 1/2 c. p. corn meal
  • 2/3 c. cooking oil
  • 1 c. butter
  • 1 c. grated sharp cheese
  • 1 (No. 2) can cream-style corn
  • 2 eggs
  • 1 tsp. salt
  • 3 tsp. baking powder
  • 3 jalapeno peppers, chopped fine
  • 2 Tbsp. bell pepper, chopped fine

Instructions

  1. Mix all ingredients except cheese.
  2. Blend all ingredients well so that peppers will be mixed with batter.
  3. Pour 1/2 of dough into greased pan or skillet; put in 1/2 of cheese.
  4. Add remaining dough, then rest of cheese.
  5. Bake slowly at 350° until done.
