Ingredients

  • 4 large eggs
  • 2 (10 oz.) packages frozen chopped spinach
  • 3 Tbsp. olive oil
  • 2 medium onions
  • 1 lb. cooked ham
  • 1 cup Parmesan cheese
  • 1 cup Ricotta cheese
  • salt

Instructions

  1. In a large bowl, beat eggs until foaming.
  2. Cook spinach according to package directions; turn into strainer to drain and press out liquid.
  3. In a 10-inch skillet, cook onions in hot oil until wilted (about 5 minutes).
  4. Stir spinach and onions into eggs with ham, Parmesan cheese, Ricotta cheese, salt, and pepper.
  5. Line a 10-inch pie plate with half of the pastry.
  6. Add spinach mixture to the pie plate.
  7. Cover with remaining pastry.
  8. Cut 6 (1-inch) vents in the top pastry.
  9. Seal and flute edges.
