Ingredients

  • 6 Tbsp. whole wheat flour
  • 1/4 lb. butter
  • 6 eggs
  • 12 oz. Cheddar cheese
  • 2 c. cottage cheese
  • 1 lb. broccoli

Instructions

  1. In a 2 1/2-quart casserole, soften the butter.
  2. Whisk in the flour, then add the beaten eggs and mix well.
  3. Stir in the grated Cheddar cheese, reserving about 1/2 cup for topping.
  4. Mix in the steamed and chopped broccoli.
  5. Top the mixture with the reserved Cheddar cheese.
  6. Bake in a preheated oven at 350°F for 1 hour or until a knife inserted into the center comes out clean.
  7. Cool for 10 to 15 minutes before serving.
