Easy Dirty Rice

Ingredients

  • 1/2 lb ground meat
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 can mushroom soup
  • 1 teaspoon salt
  • 1 small can mushrooms, drained and chopped
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1 tablespoon margarine

Instructions

  1. In a large skillet or pot, melt the margarine over medium heat.
  2. Add the chopped onion and bell pepper; sauté until softened, about 3-4 minutes.
  3. Add the ground meat and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the chopped mushrooms and cook for another 2 minutes.
  5. Pour in the chicken broth, mushroom soup, and add salt; stir well to combine.
  6. Add the uncooked rice to the mixture, stir, and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked and liquid is absorbed.
  8. Serve hot, garnished if desired.
