- In a large skillet or pot, melt the margarine over medium heat.
- Add the chopped onion and bell pepper; sauté until softened, about 3-4 minutes.
- Add the ground meat and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the chopped mushrooms and cook for another 2 minutes.
- Pour in the chicken broth, mushroom soup, and add salt; stir well to combine.
- Add the uncooked rice to the mixture, stir, and bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked and liquid is absorbed.
- Serve hot, garnished if desired.
