Easy-Does-It Donuts

These easy-does-it donuts are light, sweet, and bursting with fruity flavors from apple-cinnamon or blueberry muffin mixes. Perfect for a quick treat or weekend brunch, they fry up golden and crispy, then can be dusted with sugar or cinnamon sugar for an irresistible finish. Great for all ages and occasions.

Ingredients

  • 2 eggs
  • 2 (13 oz.) packages apple-cinnamon or blueberry muffin mix
  • 2/3 cup all-purpose flour
  • cooking oil or shortening for deep fat frying
  • powdered sugar (optional)

Instructions

  1. In a medium mixing bowl, beat the eggs and set aside.
  2. Drain both cans of apples or blueberries from muffin mixes and add to the beaten eggs.
  3. Stir in the flour and dry muffin mixes.
  4. On a well-floured pastry sheet, roll out the dough to 1/2-inch thickness.
  5. Cut out doughnuts with a floured, 2 1/2-inch diameter doughnut cutter, pressing straight down.
  6. Meanwhile, in a large saucepan or deep fat fryer, heat cooking oil to 375°F.
  7. Fry the doughnuts and holes, a few at a time, for 1 to 1 1/2 minutes until golden brown, turning several times.
  8. Drain on paper toweling.
  9. If desired, sprinkle powdered sugar over the tops or roll in granulated sugar or cinnamon sugar.
  10. Store cooled doughnuts in a sealed container.
