Easy-Does-It Donuts
These easy-does-it donuts are light, sweet, and bursting with fruity flavors from apple-cinnamon or blueberry muffin mixes. Perfect for a quick treat or weekend brunch, they fry up golden and crispy, then can be dusted with sugar or cinnamon sugar for an irresistible finish. Great for all ages and occasions.

- In a medium mixing bowl, beat the eggs and set aside.
- Drain both cans of apples or blueberries from muffin mixes and add to the beaten eggs.
- Stir in the flour and dry muffin mixes.
- On a well-floured pastry sheet, roll out the dough to 1/2-inch thickness.
- Cut out doughnuts with a floured, 2 1/2-inch diameter doughnut cutter, pressing straight down.
- Meanwhile, in a large saucepan or deep fat fryer, heat cooking oil to 375°F.
- Fry the doughnuts and holes, a few at a time, for 1 to 1 1/2 minutes until golden brown, turning several times.
- Drain on paper toweling.
- If desired, sprinkle powdered sugar over the tops or roll in granulated sugar or cinnamon sugar.
- Store cooled doughnuts in a sealed container.
