A quick and flavorful Mexican-inspired chicken dish with peppers, onions, salsa, and melted cheese, perfect for a hearty weeknight dinner or casual gathering.

Ingredients

  • 1 c. green pepper, chopped
  • 1 c. onion, chopped
  • 3 c. cut up chicken
  • 1 to 2 Tbsp. oil
  • 1 can corn, drained
  • 1 can chicken broth
  • 1 1/2 to 2 c. salsa
  • 2 c. uncooked brown Minute rice
  • grated Cheddar cheese

Instructions

  1. Saute green pepper and onion in oil until tender-crisp.
  2. Add chicken; cook, stirring occasionally, until chicken is no longer pink (8 to 10 minutes).
  3. Add corn, chicken broth, salsa, and brown rice; bring to a boil.
  4. Cover, lower heat, and simmer for 5 minutes.
  5. Remove from heat, let stand for 5 minutes, then stir.
  6. Add grated Cheddar cheese on top, replace lid, and let stand until cheese has melted.
