Ingredients

  • 1 1/2 cups boiling water
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 whole egg
  • 1 cup quick oatmeal
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 cup brown sugar, packed
  • 2 egg whites
  • 1 teaspoon vanilla

Instructions

  1. Save the egg yolks for icing.
  2. Mix dry ingredients in a small bowl.
  3. Add shortening, sugars, egg whites, and whole egg to the oatmeal mixture and mix well.
  4. Add the dry ingredients to the wet mixture and combine thoroughly.
  5. Stir in vanilla extract.
  6. Pour the batter into a greased 9 x 13-inch baking pan.
  7. Bake at 350°F (175°C) for 30 minutes or until a toothpick inserted into the center comes out clean.
  8. Top with Oatmeal Cake Icing once cooled.
