Ingredients

  • 1/4 lb. bacon, diced
  • 1/2 c. chopped onion
  • 1 (10 3/4 oz.) can condensed chicken broth
  • 1 c. water
  • 8 oz. uncooked orzo
  • 1/4 c. fresh parsley

Instructions

  1. In a large skillet, brown bacon until almost crisp.
  2. Drain off excess fat.
  3. Add onion and cook until tender, but not brown.
  4. Add chicken broth and water; bring to a boil.
  5. Stir in orzo and parsley; return to a boil.
  6. Reduce heat and simmer, covered, 15 minutes or until orzo is tender and most of liquid is absorbed.
