Ingredients

  • 1 pkg. chicken flavor Rice-A-Roni
  • 1/4 cup chopped onions
  • 1/4 pound sliced mushrooms
  • 2 tablespoons butter
  • 2 cups grated Swiss cheese
  • 1 1/2 cups half and half
  • 3 eggs
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Prepare Rice-A-Roni, using 2 1/2 cups water and cook as directed on the package.
  2. Cool the Rice-A-Roni.
  3. Spoon Rice-A-Roni into a 10-inch buttered quiche pan or pie plate and mold up the sides to form a shell.
  4. In a small frying pan, sauté onions and mushrooms in 2 tablespoons of butter.
  5. Combine the sautéed onions, mushrooms, grated Swiss cheese, half and half, beaten eggs, nutmeg, salt, and pepper; pour into the shell.
  6. Top with bacon.
  7. Bake at 375°F for 35 minutes or until set.
  8. Cool for 5 minutes and cut into wedges.
