A quick and flavorful homemade pasta sauce with fresh vegetables, tomato, and herbs, perfect for a comforting weeknight meal or family dinner.

Ingredients

  • 1/2 cup onion, chopped
  • 1/4 cup green pepper, chopped
  • 1 large garlic clove, crushed
  • 2 tablespoons salad oil
  • 2 cups tomato sauce (from 2 8oz cans)
  • 2/3 cup tomato paste
  • 1 1/4 cups water
  • 1/2 teaspoon oregano leaves, crushed
  • 1/4 teaspoon basil, crushed
  • 1 bay leaf
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Saute onion, green pepper, and garlic in a medium saucepan.
  2. Stir in tomato sauce, tomato paste, water, oregano, basil, bay leaf, sugar, salt, and pepper.
  3. Heat to boiling, then reduce heat and simmer uncovered for 30 minutes.
  4. Remove the bay leaf and serve over hot cooked pasta.
