Ingredients

  • 1 cup raisins
  • 1 teaspoon baking powder
  • 1 cup boiling water
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 beaten egg
  • 1 tablespoon vegetable oil

Instructions

  1. Combine raisins and baking powder in a bowl. Add boiling water and let cool for 30 minutes.
  2. Mix flour, sugar, and salt in a separate bowl. Stir in the raisin mixture, beaten egg, and vegetable oil until well combined.
  3. Pour the batter into a greased pan.
  4. Bake at 350°F (175°C) until golden brown, about 35 to 45 minutes.
  5. Cool in the pan for 10 minutes before removing.
  6. Wrap well and store.
