Ingredients

  • 1 lb. smoked sausage, cut into 1/2 inch slices
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 garlic clove, minced
  • 2 15 oz. cans kidney beans, drained
  • 16 oz. can chopped tomatoes
  • 1/2 tsp. salt
  • 1/2 tsp. oregano

Instructions

  1. Cook sausage over low heat for 5 to 8 minutes.
  2. Add chopped onion, green pepper, and minced garlic; cook until tender.
  3. Drain excess fat if necessary.
  4. Add drained kidney beans, chopped tomatoes, salt, and oregano.
  5. Simmer uncovered for 20 minutes.
  6. Serve over rice.
