Easy Shrimp Etouffee

Ingredients

  • 2 lb. shrimp, peeled and deveined
  • 1 stick margarine
  • 1/2 c. finely chopped celery
  • 1/4 c. chopped bell pepper
  • 1 c. chopped onions
  • salt, pepper, cayenne, garlic to taste
  • 1 tsp. cornstarch
  • 1 1/2 c. water
  • 1 can cream of mushroom soup
  • 1 can tomato soup

Instructions

  1. Season the shrimp with salt, pepper, cayenne, and garlic, then set aside.
  2. Melt margarine in a heavy pot over medium heat.
  3. Add chopped celery, bell pepper, onions, and garlic; cook slowly until onions wilt.
  4. Add the seasoned shrimp to the cooked vegetables.
  5. Simmer the mixture for 20 minutes.
  6. Dissolve the cornstarch in water, then add this to the shrimp mixture.
  7. Add the cream of mushroom soup and tomato soup to the pot.
  8. Cook for an additional 15 minutes, stirring often.
  9. Serve hot with rice.
