- Split and toast the English muffin.
- Cut an X in the middle of the bologna and clip edges in 3 or 4 places to prevent curling.
- Pan-fry the bologna in a nonstick skillet until lightly browned, turning once.

- Place the cooked bologna and egg on the bottom half of the toasted muffin, then top with a slice of low-fat cheese.
