Ingredients

  • 4 to 5 eggs
  • 1/2 cup celery, chopped
  • 1/2 cup green olives, sliced
  • 1/4 cup red onion, chopped (optional)
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon-style mustard
  • salt to taste

Instructions

  1. Peel and mash the hard-boiled eggs using a fork or potato masher.
  2. Add chopped celery, sliced green olives, red onion (if using), mayonnaise, Dijon mustard, salt, and pepper.
  3. Mix gently until well combined.
  4. Chill the egg salad before serving.
  5. Spread on bread to make sandwiches and enjoy.
