Ingredients

  • 1 lb. tofu, drained and mashed
  • 3/4 c. cottage cheese (low-fat or fat-free)
  • 3 tsp. mustard
  • 3 tsp. onion powder
  • 6 oz. chopped celery

Instructions

  1. Mix the mashed tofu, cottage cheese, mustard, and onion powder until well combined.
  2. Add the chopped celery and mix again.
  3. Serve the salad open-faced on bread and garnish with alfalfa sprouts.
