Ingredients

  • 3 Tbsp. butter
  • 1 Tbsp. vegetable oil
  • 7 c. halved and thinly sliced onions
  • 1 tsp. sugar
  • 1 tsp. salt
  • 2 Tbsp. all-purpose flour
  • 6 c. vegetable broth
  • 1/3 c. dry sherry
  • 1 tsp. chopped fresh thyme
  • 1/4 tsp. ground pepper
  • 1 loaf bread, cut into 1/2 inch slices
  • 12 oz. Jarlsberg shredded cheese

Instructions

  1. In a large heavy pot, melt 2 tablespoons of butter with oil over medium heat.
  2. Stir in onions, sugar, and salt.
  3. Cook, stirring constantly, for 1 minute.
  4. Reduce heat, cover, and cook for 10 minutes.
  5. Remove lid and cook for 15 minutes more, stirring occasionally.
  6. Add remaining butter to the pot.
  7. Cook, stirring occasionally, for 15 minutes or until onions are caramelized and very soft.
  8. Stir in flour and cook for 3 minutes.
  9. Stir in broth, sherry, thyme, salt, and pepper to taste.
  10. Cover and simmer for 15 minutes.
  11. Preheat the broiler.
  12. Lightly toast bread slices.
  13. Ladle soup into 6 ovenproof bowls and arrange on a baking sheet.
  14. Place toasted bread on top of each serving.
  15. Sprinkle shredded cheese over the bread.
  16. Broil until cheese is bubbly and golden.
  17. Serve hot.
